It's gotta be Winterfest for me, as I love Christmas IRL! I usually add Winterfest Eve the day before, as well as a day on the first of Winter where my sims put up their decorations. (We put up our IRL decorations at the beginning of November!)
I also like Harvestfest (Minus the gnomes, which I removed) The last time Harvestfest came in my game, my sims had a "Harvestfest Harvest Festival" in Magnolia Blossom Park. with live music, the rides from the HSY pack, and food stalls. I plan to continue that tradition each year.
I voted for Love Day. I was surprised that it hadn't gotten any votes yet, so I gave it a check. 😄
But I often have sims who aren't ready for romance, so the default Love Day is tough for them. Instead, my Love Day consists of Watch Romantic TV, Appreciate an Object, and do Art & Music Spirited activities. 💃
Besides Love Day, I also edited Harvestfest, Winterfest, and New Year's Eve. They each have 3 activities to complete, and sims get the day off from work. I also added Springfest, Summerfest, and Spooky Day. 🎃
I like the simple holidays too: Talk Like a Pirate, New Skill Day, TV Premier, and Free Night on the Town. 🥂 But I got rid of Brawl, Prank, Lottery, and Rebate--none of which work well for me.

I like evil with plan and reason not punching my neighbors in face as a joke
I also like to build my sims houses with plan not just buy things when its on sale
Night on the town is fine cause meanwhile I don't use it often it does remind me there is in fact towns out there to be explored 😂
@Simmingal Night on the Town lets my sims finally try the expensive choices of food and drinks I hardly ever let them have. 😄 And Rebate Day seems to always come around after I've already bought what I need. 😖
I like days where I don't have to do much. With Lottery day, I don't have to do much AND there's a chance my sims can win 1 mill.

For my vampires I wipe the calendar clean and set up four holidays based on the changing amount of daylight (real world inspired, since it doesn't seem noticeable in the game). Winter Solstice is about gratitude. Spring Equinox is about friendship and love. Summer Solstice is about concern and charity. And Fall Equinox is about penitence. I use traditions from the holiday system to augment that where I can, but a lot of it is just my own storytelling as I play.
For my household living in Mount Komorebi, I've tried to set up holidays reminiscent of the holidays I saw while living in Japan. Though the in game holiday traditions and objects don't work real well for them, so they aren't exactly the same. I think my favorite of the ones I've done so far has been the New Years Day holiday in which my sims hiked out to pay a visit at the big shrine that's in the hiking area and then went home and shared a hot-pot meal together.
From the more usual "Sim holidays" I think I have had the most fun with Spooky Day.
Thanks @mightysprite ! The vampire holidays are incorporated into my planned world building for SAM as well, though so far only one (extremely subtle) allusion to one of them has been made.
I love all of them and add several more different holidays in. Each save has a slightly different focus of gameplay and that extends to the various holidays and festivals. I have created a lot of special holidays, festivals and expo-style events. It is so sad (imo) that once again the modding community has had to create the gameplay and access to existing costumes… that should have shipped as part each relevant pack. eg Business seminars and expos… RoM should have had the ability to hold solstice festivals… as all other occults should have special events as well…. Halloween should have had access to all costumes….
Not to mention how much I miss the community seasonal events from previous iterations and have attempted to recreate some of these. Although some of it is not possible to recreate - kissing booths, bobbing for apples… so sad!!!
Absolute all-round favourite has to be Winterfest although I also play a Summerfest (because here in Australia Christmas is in summer so it’s all about hot weather family fun ie camping holidays, water fun, bbqs… 35 to 47 degrees Celsius.) In RL it is also a long-standing multi-generational extended family tradition to celebrate Christmas in July for the colder weather celebrations with all the White Christmas traditions and food. We travel to the snowfields for this and stay in a special muti-dwelling rental property as an extended family group for this cold weather celebration with actual snow!
I completely redo my calendar to match holidays in my country, but i always keep the lottery event Definitely have never black widowed the winners either
