I played from the launch and I felt the first was very lacking, I went on a break from sims and only came back in mid 2017 so the third one grew on me.
I don't hate the third one. Currently. I hate how the pack icons occupy half the screen and how small the render is. For the first one, I liked how we could see the new pack animations on the screen.
I picked the new one just cause it looks neater and more organised to me. I don't spend that much time looking at them though so it doesn't really bother me how they look.
Big play button, a button to get right into CAS, and nice large renders of the latest content. I don't need to see which packs I own/don't own right in my face every time I launch the game, and I don't need over-saturated blue either.
1st and 2nd had cleaner looks and didn’t have all the packs lined up like a constant reminder (“hey look at what you don’t own and still need to buy.”)
oh my God! :'( my eyes hurt SOOO much by looking at small pictures of the new loading screen (e.g. in youtubers' reaction videos) I just updated my game and I don't know if I want to even start playing, because I don't know how painful the fullscreen is going to be. I was very satisfied with the previous design, main and loading screen were more "calm", not eye wearing at all and would never trigger any epilepsy seizure. Seriously. Are they trying to make us quit the game?
Looking at the choices I prefer #2, but honestly after these things are changed I can't remember the differences a week later. (Not just Sims but everything - forums, Facebook, my friends after haircuts...)

The only thing I like about the last one is the freezer bunny and llamacorn(?). They are very cute. Otherwise, no.
