Okay, let's do it! It's hard to set up a top 5, but so far, sims I like playing are:
1. Ethan Parrott & his family (Appaloosa Plains)
I've played this family 4 or 5 times. I've matched Jazlyn with both Kanoa and Kale several times and they even adopted a couple of premades such as Charmaine Hopper and Kalliopi Ellada.
2. Connor Frio (Sunset Valley)
I believe it's @Charlottesmom 's influence. Whenever I play in Sunset Valley, my sims always have to befriend him. I also play with him once as an elder and it was cute.
3. Jak Reynard (Appaloosa Plains)
The repairman in Appaloosa Plains has always caught my eye. His wardrobe may be a little too loud, though.
4. Kyle Heilman (University Life)
Even though I prefer his hair dark and I play with my version called Keith, Kyle is super cute and has got nice traits.

Mortimer Goth. Always loved him in TS2 but he had a tendency to pop his clogs early in the game so in TS3 I really got to direct his early life and engineer that all important marriage with Bella.
Matthew Hamming. Just love the name. He is currently married to an actress sim of mine, they have one son at boarding school and live in a house I built for them.

Gilberto Gonzalo. Nothing much to look at in his athletic gear but when he goes swimming .......... Dreadful snob so I made him live in the beach shack until he and his wife Ashley could afford something better. They now have a daughter, Marina and he has taken to parenthood surprisingly well.

A topic about my favourite subject premade sims
I've only been part of this TS3 world for 2 weeks now but I'm loving the premades who I've played with so far.
Bella Bachelor/Goth and Mortimer Goth are amazing. Here is a picture of them going to a prom.
Nancy Landgraab is awesome(she went under a knife)
Kat Hunter is also a hot lady and really fun to play with.
Anna-Liza Riddle is also one of my favs so far. I mean she is adorable! She reminds me of Jessica Fletcher or A Murder She Wrote. (She has actually adopted a girl names Jessica in my game)
She works as a PI atm
My TS3 journey has just started and mind is probably gonna change once I meet more premade Sims. But so far these ladies have taken my heart.
My favourite premade sim is Agnes Crumplebottom. She was the very first sim I ever played with in the sims 3 because her storyline seemed interesting. I also the love the details in her house like the half-finished nursery. I was soooo bad at playing the sims that her needs were constantly low, though putting her in the medical career probably didn't help.
I also didn't realize until like two sim weeks later that I could move the camera away from the house to look at anything I wanted and go there, too! My mind was blown!
I feel bad that I couldn't give her a happily ever after at that time. I hope that one day down the line I could maybe add her to my legacy family.
Although not a premade from a town, this sim is a premade bin sim. I won't say that he is in my top 5 but I really love how he turned out once I tweaked him and added CC. Technically he already had CC in the original pic because I use default replacement skin, eyes and brows so for those of you who don't use CC he will look a little different straight from the bin.

I really loved the Jones in Riverview and the ghosts. They had twins. One was brave and the other was a coward. The coward kept fainting during the night because of the haunting. The brave one was kept awake by the little blue ghost girl to learn science and save her.

Vladimir Schlick-He has distinctive handsomeness and he has coward and evil trait at the same time, he's a technophobe workaholic but wiki said"This trait will make a workaholic take a mood hit due to the case that working overtime uses computers"(maybe tsundere?). And his appearance remind me a real life metal singer Michael Vampire.
