I couldn't seem to find the answer to my question in the tutorial, so I'm hoping someone might just know...
There are two options to rotate joints. One option rotates rigid horizontally and vertically, and the other does a bit of a morph. I've been able to use both modes fairly easily, and switch back and forth between the two. However. I must have clicked something or hit a wrong key! I am no longer able to rigidly rotate sim joints horizontally or vertically. They just get mushy. How do I fix this? What have I done? Ugh.

Was it a step in a tutorial that you were using from the sims 4 studio site? If it was, it would be good to post about your issue on their forums and simmers may be able to help you.
