So this is the first time I've actually made a real attempt to run a restaurant. I guess I mistakenly hired one of my created sims that just didn't have a home at the time. And when I went to play her and move her into a home she was immediately dropped as my other sims' employee. Why do they have to be homeless to be your employees? Is there a work around? Or am I just totally doing this wrong? Sorry if this is posted somewhere else, I looked at previous threads and didn't see anyone mention it.

You can move an employee into their own home, but you can't play them. As soon as you play them, they will no longer be an employee.
After hiring a homeless sim, go to manage households, and click on the household of the employee. Then move him/her into a home. Don't play the household. They should then remain an employee.
