Ack, way too much I haven't done yet!
I haven't:
-Had a sim die from an emotion
-Played the detective career
-Made ambrosia
-Plead with the grim reaper
-Had a sim get married more than once (or break up or cheat on their spouse)
-Used the cupcake factory
-Run a retail store
-Used the adopt feature
-Had a party besides a dinner party (had to complete the master chef aspiration)
-Played a pre made household
Man, there are many things I haven't done by now, so many that I definitely can not write everything down, but just to name a few:
I never
- got a career to level 10
- played the scientist career
- played a toddler
- played an elder
- did the legacy challenge (or any other challenge )
- completed an aspiration
- resurrected a sim
- played as a ghost
- played as an alien
- visited Sixam
...and many other things that I'll add when they come to my mind

When I read the thread's title, I thougth for sure my list would be a rather short one. But after reading everyone's posts, I realized that there is so much to this game I haven't done:
Completed any of the Deviance (Public Enemy or Chief of Mischief), Family (Successful Lineage, Big Happy Family or Vampire Family), or Popularity (Leader of the Pack, Good Vampire, Joke Star, Party Animal, or Friend to the World) aspirations.
I also haven't completed the City Native or Serial Romantic aspirations.
I haven't maxed the DJ Mixing, Wellness, Singing, Pipe Organ, Mischief or Herbalism skills.
Own a restuarant
Made ambrosia to make a ghost playable
Played the Detective, Doctor, Criminal or Secret Agent careers or the three new careers from CL
Played a Vampire or Alien
Made a clone
Thrown a successful Birthday, Spooky, Incognito or Black and White Party.

I mostly play with young adults, but I also like to play families when the kids are atleast in the child stage. I haven't played the TS4 toddlers yet, but I know from TS3 that I didn't enjoyed them at all. I am also like this in real life, I just can't stand kids that are under 5 years old
@Humor There is a sale now by the way. Until the 18th April, it's -50% on expansion packs, somewhat lower reduction for the other packs

- Complete a collection.
- Die by the game's control (only through cheats and or manipulation).
- Have any more than two babies at a time.
- Have a polyamorous relationship (though I have plans...).
- Be an alien.
- Go to Sixam.
- Use the cupcake factory (it's way too big).
- Max out any skills or complete any aspirations while a Child.
- Max out any skills as a Toddler.
- Live in or visit Magnolia Promenade.
- Complete anything while a Vampire.
... And probably much more that I can't think of right now.
Oh, there are quite a few things I've never done in this game:
-I've never had a Sim max all skills (though it sounds tempting to try)
-I've never completed all the collections
-I've never finished a challenge (I lack the focus for that)
-I've never used any of the gameplay objects in Vintage Glamour Stuff
-I've never hired a maid or handyman
-I've never built a house (I suck at building, so thank god for the gallery)
-I'm pretty sure I haven't used at least half of the furniture in game because of the above listed reason
-A lot more I can't think of at the moment.
This makes me think I should maybe try doing what I've never done and see how it changes my gameplay. I might be missing out on something I would like simply because I haven't discovered it yet. Thanks for starting this thread @MrMonty96 and giving me ideas for new things to try. It's been really interesting to read everyone's replies too.

I've never seen anyone have triplets on the forums or in let's plays, it's very rare. The only time you could probably get them is with MCCC

I am not a big fan of toddlers in the game. While cute enough, they all look similar mostly and dont come with any fun to interactions, to me, personally. They whine a lot lol. I have a real life toddler to fulfill all those needs for me.
The older child sims, on the other hand , do not all look alike and are more fun to play for me
