Thank you for the great advice and so happy that it's helped others too I'll hopefully be able to work on the roofing more tonight but it's super hot in the UK which means my laptop gets really hot which also makes me super hot lol but this is what I have so far:

Great trick by @Karritz , I would probably have never come up with that. I always make dormers with the roof going the easy way. As for your build though, I would build the dormers out on the other side of the roof, then pull the dormer roof out, so the ridge is underneath the main roof.
I make houses with liveable attics/dormers all the time. What I usually do is put on the main roof, then put in the side walls. Then adjust the main roof pitch so that the side walls are on the slope of the end walls.
Another fun trick with roofs is making a Widow's Walk. I put a one or two tile wide upper floor room, with two or three tiles wide space on each side. Then use the half-gable tool to make a roof that butts up against the top of the room like so:

This house was made pre-SS (spiral stairs). I've got more recent ones that do use spiral stairs, but I don't have any pictures of them.
