It's more the odd randomised outfit/hair choices which bother me. I sometimes go into CAS and give them makeovers (although I don't change their face or body).
I normally use all five slots for each category however I do change them as they age (eg. for child sims I tend to put them in more trendy/grown up outfits as they get nearer teens so they appear more like tweens or when sims age from YA to adult I usually give them more conservative outfits etc).

I sometimes send couples there for a romantic break/honeymoon or families for bounding and skill building. I have sent child and teen sims who are in the scouts there for a weekend to help earn their badges (plus help make it feel more like real life scouts/guides).
This. I mainly play with families so I'd also like more game play for teens and elders. However as babies are currently objects I'd prefer to have them updated first; even if it's just something like being able to drag the bassinet into another room in live mode would be an improvement.
My actress sim became a writer after maxing out her acting. Musician or poltican would work I think as actors/actresses in real life have made these switches plus he's already got high singing skill and I'm assuming pretty high charisma too.

No. Most teenagers in real life are the same height as adults so having them the same height as YA to elder makes sense to me. I think they should maybe add some more typically teen age activities for them though: for example being able to follow them to school/their part time job, proms, slumber parties etc.
