Any actual career that DOES NOT involve social media, a cellphone, a computer, a tablet, or any other electronic devices. I have been getting the impression from the Devs that might be too hard for them to accomplish.
Teacher, lawyer, librarian, accountant, mailman, garbageman, bus driver, cashier, waiter/waitress, construction worker, hairstylist, and other normal, basic, average joe jobs that aren't based around social media and electronics.
I believe so far they've covered 80% of most common professions by careers and part-time jobs.
Teacher and Farmer are the most obvious missing ones.
I'd like Firefighters too.

But I agree 100%. We need real jobs, not just Internet related ones.
I would like to see
- teachers (active career or maybe in combination with active school / active career for students)
- architects (freelance seems appropriate for this one, work from project to project. but with a drawing table or models to build, not completely computer)
- mechanics (work from home in combination with car repairs)
- paranormal career. (This one could be rabbit hole for all I care, but something a bit more extravagant than the traditional jobs but without a computer)
From the other suggestions in this thread I like the idea of farmers and firefighters.
Many have also said this, but I would love teachers. Especially if it came during a university pack. Also Ghost hunter like from the Sims 3, but of course worked upon.

Yes, I was thinking about a paranormal or occult career option too. Something to do with witches, vampires, aliens, faeries.

I was also thinking of something like Potion maker, magic spell maker (put it on a scroll and sell it).
Potions could do something funny for a tempory amount of time like turn you into a llama or change appearance as well as permanent things like improving luck or fertility or whatnot.
Vampires could use a job that works the night shift (or jobs that have a night shift option?), firefighter would be great for a night shift job, maybe a club manager, cemetery groundskeeper? lol
Celebrety manager (could help manage celebs and their career)
How about librarian, historian or museum curator (sub category under archaeology) could work for the night shift loving human sims and vampires too.
Still totes would love to see Rock Star under the Entertainer career.
I'm still holding out for a teacher and a rock star/band/singer career. Five years later I'm still surprised that wasn't the musical branch of the entertainment career! Plus an actual archaeology career to go with the skill in JA, I feel they've really missed an opportunity there.
I'd love: lawyers, architects and interior decorators, paranormal investigators, teachers, daycare or kindergarten (although they'd have to fix toddlers first), being a chef at one of my restaurants (overcooked, anyone? 😅), freelance DJ, being in a band (although I want none-band member sims to be able to jam together as well of course, but I'd still like a band career if and when we finally get real bands back), comic book store owner, and just generally fun active careers

I am hoping for more 'normal' careers, particularly for my handy sims, e.g. architect/builder, mechanic (with cars), teacher, fire fighter, lawyer, dancer, tattoo artist etc. I would really love a hotel venue with the option to either become a hotel manager or work there as a hotel assistant. I would also love the option to choose what are currently only NPC careers, e.g. librarian, repairman etc. Some supernatural themed careers or self-employment options would be fun too e.g. vampire/occult hunter, alchemist, psychic/fortune teller etc.
