  Disney princess Challenge sounds fun to me. I'm going to do the Living as a Royal Challenge: http://forums.thesims.com/en_US/discussion/831196/living-as-a-royal-challenge-beta#latest It's kind of a take on the Disney Challenge but looks more creative.
  
  I'm currently doing the Amazon Challenge--it's REALLY fun (check out my story below for more info on how to do this).
  
  ISBI (I'm surrounded by I di ots ) uses the insane trait and you can only help that sim. I think it would be easy to do and is way more fun than a normal legacy. I started out with a normal legacy and quickly got bored by the second gen.

  You might enjoy trying a few games at once: you can have one that's your "Play for Fun" game where you allow any types of cheats and just experiment with getting to know your Sims and seeing how they interact and so on. Then, you could have a legacy to see what it's like to play Sims with no cheats and under specific lifespan and other types of restrictions. I've learned so much from reading other stories and legacies, too, so that's a great way to get tips! Mostly, just enjoy! (And remember to save copies of your favorite Sims to MyLibrary or the Gallery, and to save back-up copies of saved games to a thumb drive--just in case!)

  Oh, you know what else? The Three Little Sims challenge http://forums.thesims.com/en_US/discussion/796760/the-sims-4-three-little-sims-challenge would probably be awesome for someone just starting out, since it's designed to help you experience what Sims are like both autonomously and when you have full control of them! I haven't tried the challenge yet, but it's on my list.

  Since you are a new player I echo the suggestion by @CathyTea and just play for fun. Either create a Sim of your own or play a pre-made family. That will acquaint you with how to manage your household. It will also give practice with the emotional factor. The rest can come later.

  I'd also say, play for fun. Challenges can be fun but if you are still new to the game - you might want to start out slower.
  
  Certainly spend some time getting used to the game - have a save for play. When you can manage that well, then it's time to look at the challenges. And believe me, there are a LOT of challenges that you can try. Both shorter and longer ones.
