Sims' choice of little behaviors - how do they change?

I was wondering if there was somewhere that I could learn about why Sims behave in certain ways, beyond the major trait behaviors.
I have a Sim who used to have a huge smile on his face almost all the time, it was very cute. I moved the couple into a new house in a new town, and now he usually has a pouty look. It's kind of sad to see him that way.
I have another couple with one vampire. They met at college - during and immediately after school the vampire would always do the more intimate neck bite for the drink interaction. Again, I moved the couple and his behavior changed. Now he only does the haughty request for an arm.
It may seem strange, but little stuff like this can make me want to stop playing a Sim. If anyone knows how to explain or change these little behaviors, I'd really appreciate it.
