Platforms With Multi-Storey Houses

I was wondering, how do the platforms work with multi-storey houses? Can you put one between floors so there is that proper real-world thickness between them? How does it affect stairs?

Yes you can, stairs just go through. Just build the second story and click the 'up' arrow in the room pop-up.
Be careful since it does lower the ceiling height, so if you use a big platform, you might have to increase level height for the sims to stand. I use the smallest door for reference

You can have a platform on the first floor that raises to half wall height to give the appearance of a floor in between the 1st and 2nd floor, however the space below any platform is unusable so we still can't make a true split level house yet. Stairs can connect any platform to the next floor up or the original floor the platform was placed on. Did you have any ideas you need to help completing?
