Like others mentioned, try ShadowPlay if you're using a modern Nvidia GPU, or RadeonPro for AMD GPUs. They are supposed to have a minimal impact on your frame rate as they utilize some specialized hardware on the graphics card itself for encoding the video.
If you want to reset everything, including skills and earned aspirations points, just create a twin of the sim in CAS. Clothes will be randomized, but the sim's body, face, traits (IIRC), walk style and voice will be retained.

Maybe it's just me, but my favorite part isn't the new careers, new content, or paid time off. It's the goals tuning. I feel that the game has become much more playable just because of those tunings.

Added a new little tuning to change the 5 BFFs requirement in the Friend of the World aspiration to 10 Good Friends instead. I wanted to change it to 5 friends with >90 on the relationship bar instead, but that requires me to delve into scripting in order to add a new test criteria. I may look into it if I have the time.
I think NPCs such as Mrs Crumplebottom, Claire the Bear, Unsavory Charlatan etc work better with closed worlds; they would be too hard to encounter otherwise. Now there's no excuse for EA to not bring them back ("oh, but they are animation-heavy blahblah").

Maybe they should label it as "Early Access" like some indie games on Steam. Actually, I don't mind it one bit, especially for Sims games where I can play continuously for years. What they need to do is manage players' expectations.
It depends on how you view it. On one hand, pools and toddlers were removed because they were in previous games and TS4 lacks them. Technically though, they have not been removed because they didn't exist in TS4 in the first place. Both schools of thought make sense and can be justified.
