When you're in a town or family, click on the three dots (...) in the far bottom left corner, then on Options...
click on the tab on the top that looks like two gears.
The last three settings relate to how the game is played, which includes aging.
Also, there are reward objects for fulfilling wishes like the Sims 2. I didn't explore that farther, but it's probably one of them simply because it's so awesome. I noticed there were some similarities between objects from the Sims 2 and some from the Sims 3, so some of the better things probably carried over.
