Yes, a (non-retail) career gets treated the same way. Someone else will have to answer about if it warns you you quit the other job.

I had my sim doing programming and after a while was offered the ability to do a side job. You didn't actually go to work anywhere but did a job on the computer and got paid for it.
My favorite way to bring in more money is to have my sims write books. They get book royalties so you always have money coming in.
