Whilst I miss careers like medicine and law enforcement, I quite liked that they brought new careers to TS4.
It got me thinking about other careers that would be fun to try!
So far I've thought of: engineering, dentistry, landscaping (as opposed to gardening), meteorology (for when we get seasons

my Sim would make an awesome weather girl!)
I've also seen some really good suggestions on other parts of these forums, so I can't take credit for them, but I'll post them here too!

Landscape Maintenance - needs to gain gardening skill
Arborist - more gardening skill, perhaps up to 6
Plumber's Intern - gaining handiness skill, repairing/upgrading a set number of plumbing appliances
Kitchen Intern - gaining more Handiness skill, repairing/upgrading a set number of kitchen appliances
Electrician's Intern - gaining more Handiness skill, repairing/upgrading a set number of electrical appliances
Handyman's Intern - More handiness skill, creating a certain number of items on the bench
Electrical Engineer then goes on:
Electrician Student - More handiness, add on logic
Assistant Electrician - Max handiness, continue logic
Junior Electrician - Max logic, repair/upgrade number of appliances
Master Electrician - Final reward should be something amazing and electric based, like a life-size "Newton's Cradle" that creates a holograph, used for fun that gives a focused mood.
Construction Professional goes on:
Handyman - More handiness, add on fitness
Kitchen Designer - Max handiness, continue fitness
General Contractor - Max Fitness, create/make number of items on bench
Super-Builder - reward would be the Master's Bench...an enhanced handiman's bench that is used the same, but adds a confident mood.

Those are my ideas for careers.
They could expand that to law enforcement, medical, basically any kind of career that allows for decision making on the jobsite. Traditional jobs like office work, or things typically related to doing a single task can stay as the rabbit hole mechanic. That way larger families don't have to micromanage their Sims as much.
