Sims 2 - She's not active anymore, but I loved The Jessa Channel. She built her neighborhood from scratch. You can also look for simmer George and Pleasant Sims, they're active. These are on YouTube.
If you want to see a machinima, I suggest The Awakening by April Hoffman. Probably one of the best I've ever seen. Also Jaydee has great music videos. Both on YouTube.
Don't know about sims 3 since I've never really watched anything. I think James Turner is getting back into it, but only because I seen that as I quickly searched.
