    How come I can only have one roommate

    I have more than 1 bed available in discover university. Is this a bug? Or am I doing something wrong?

      It depends how many beds you have total.

      If you have a married couple and want a roommate, you need at least 3 individual beds. Double beds count as 1 bed even though they sleep 2 Sims.

      I was also reading from someone else's post where they noticed that even pets are counted towards the count as well.
