The 2 GB RAM limit on the Mac version is "a" barrier to performance, can't say for certain that it is the one you are facing. Many players can still get enjoyment out of the game by keeping things under 2 GB of usage and purging RAM frequently throughout play, but with all 11 EPs it's bound to come up eventually as games progress if not right away.
There is no way to extend the limit on RAM usage. I play on an iMac as well, but gave up on the Mac version of TS3 years ago and play the Windows version instead through Bootcamp. Of course, not every player is able or willing/has the patience to manage two operating systems, but for those of who can and wish to, it works great like any other install of the Windows version.
