I know that I could google this like carls guide but I kinda feel like that a little cheating, is there some sort way like a book or something to get to know what symptoms goes with what illness, or do you have to trial and error it and is there a way to use the notebook for that?

you don't necessarily have to do it in a trial or error kind of way
you could run tests until you get a guaranteed diagnosis and then take note of what symptoms you saw and what the illness turned out to be.
some of the symptoms are really obvious as to what the disease is so it isn't all too hard to figure out
i don't think there's a way to utilize the in-game notebook for this but after a while of doing it you'll probably have it in your head already
