I've posted this in a couple of threads before - of course I could only retrieve the first one (which needs a bit of editing), I think a lot of these things have been mentioned already but here's my mini guide to a succesful wedding (at home, but a lot can be applied to weddings on community lots as well):
The wedding:
Follow the party requirements, I don't think weddings require flirty or playful moods, if they do, the VIP bucket thing you get for gold dates may be useful for a flirty aura, or MySims statues for a playful aura, or emotional paintings (I always use those things to get past those party goals fast and on dates too).
With the Spa Day pack you can also use incense to create various emotions.
I normally find weddings pretty easy, but it's like a learning curve. However, I just use elope now, someone always dies during the party, lol. Elder npc, histerical bride, you name it, it's happened to me.

I love the incense! It's so easy to use. Of course, I love incense in my own home, so maybe that's another reason why I enjoy it so much in the game.
I don't know...I've had some really useful caterers turn up to my parties! But that being said, I always prep a few party size dishes beforehand, just in case, or I simply make the caterer a sim that's part of the household.

My sims had a horrible wedding experience once. I was playing in Windenburg and had my sim marry one of the members of the club she was in. They had very little money and only had around 100 simoleons left after throwing the wedding. I had them invite a bartender and entertainer, but then realized that they didn't have a bar or piano. Also, the bride happened to be pregnant at the time.
Finally, they were ready to start the ceremony...
And of course she decides to go into labor right at that moment.
They went to the hospital and gave birth. When they got back, I couldn't throw the wedding party again because they had no money, and just had them get married privately.
I have the same problem! I hate eloping immediately in my games because I want the experience to be big, bountiful, beautiful and memorable. But weddings are just so jumbled and difficult and just so... UGHHH that I have to elope immediately because I just cannot go through the wedding experience. My musicians never show up, the mixologist and caterer just stand there and the guests wander around whilst my Sims are getting married. It's just tragic.
