Making Sims in CAS

Ok, so I got fed up with the ugly townie Sims that live in China, Egypt, & France. I'd like to use CAS to just make new families, but I guess I have a few questions first. Will the Sims I create & move into China (for example) have the hidden Chinese trait & everything? Am I going to mess up the travel destinations if I delete certain Sims? I feel like this should be obvious, but I haven't bothered to do it before, so I don't really know xD thanks~
