Besides the roller blading and ice skating rinks that I would love to see return, here are some fun ideas:

Laser tag (I bet they can reuse a lot of the animations from paintballing... having both laser tag AND paintballing would be so awesome):
Indoor rock climbing (the TS3 climbing wall was cool but got boring fast...we need a full on indoor climbing park!):

Public pools:
Some others: archery range, nectar store (that lets you throw wine tasting parties if you own it), pre-arranged shows for stand-up comedians in the lounges so sims know ahead of time to go and watch them, piano dueling bar, jazz club, old school disco, berry picking farm (make it fun rather than focus on gardening- sims are chatting, eating berries as they pick them, finding random goodies along the way, etc.), kids petting zoo, science museum for kids, a Gymboree type venue where you can drop kids off (and then choose to follow the adult somewhere else or stay with the kid)

Indoor skydiving (was one of my favs in TS1):
Arcade (TS3 was pretty good with this after all the store stuff, but we never had a racing simulator, or that annoying coin game):
Drive- in movies (I think this beats the cinema, as you can have your sims do stuff in the car ):
There was a funny skydiving machine in sims 1 which they should bring back.
There was also a rollercoaster which was fun.
What about a Ghost Train or the haunted house from Sims 3?
