But ... If I were actually trying to be 100% accurate I would of mentioned Andre's lack of heterochromia as well ... *shrug*

Huh, I don't really see a lot of any country of that area in her. She'd have to be majority something else and, in that case I think having a run of the mill white chick play her is appropriate. Asking us to find a middle eastern actress who resembles her from 1987 is asking a lot.
The closest thing I could get you - a Jewish actress of the time. How about Debra Winger?

Just now I tried - yet again - to make Amber's parents look more like I want them to. Really not quite there yet, and I don't think they're going to get much better. It's very hard to make older Sims, especially when they're supposed to have a very specific look. In this case, the look is "friendly upper-class pensioners who had really good jobs in the 80s but haven't changed much since".

Isabella's side profile is very good! I can definitely see the Jewish ethnicity there. So I guess it's just a case of it not translating well on a straight face photo.

But I have a suggestion: Agam Rudberg, which is an israeli actor/model, and her family is from Latvia+Romania+Morocco
Also I think Isabella kind of resembles Lizzy Caplan-
I guess it's the hair? There should also be some Michael Douglas in there, but I don't know if you can really see that. Maybe it's just because they're both 70-ish year old men named Michael.
Either way, both Michael and Andrea were really handsome when they were younger, so I'm really going for the "handsome people who aged well" look...even though aging is near impossible in TS3. You just can't create old people.

Her dad reminds me somewhat of Ralph Fiennes. Just if Ralph had more hair and darker eyes.
For her mom, hmm...something about her reminds me of Jessica Tandy -
And since you say they are meant to have aged very well, I think she and Ralph are good for that as well since both, even in older ages, still looked/look great! Unfortunately, their ages wouldn't pan out if this were actually a movie. I'd need to find an actor a lot older than Mr. Fiennes!
Oh, Stephen Fry, I like that! Demyan indeed was a cute and lovable man by the way (sorry haha, they are really 'alive' and real to me).
