On TSR I have a VIP account, the site has no dynamic loading or full-res previews which makes it workable for me.

I'm not very good at using the create-a-pet thing so I wonder if the red brindle pattern already exists and if it is possible to take a dog breed/shape and apply that pattern somehow. Although, I may end up doing a request.
@Suceress Making a brindle Akita is fairly simple. Open up CAS and choose to add a dog. On the right, you should see symbols, the top paw shaped symbol should bring up the breeds. You should see an option to "search for breed", type in Akita and a pre-made Akita will appear.
To change the coat to brindle click on the 4th symbol down (it looks like a rug) for "Coat Color and Pattern". You will have to use the scroll bar to find the option you want. It looks like Brindle is at the very top of the options on the right. You will then have 5 color options. Otherwise, just scroll through until you find a dog (or cat) with the markings you would like and click on them. Sometime there will be multiple color options and sometimes there won't be any.
You had mentioned wanting tailless cats. To change your cat/dog to a bobtail click on the tail shaped symbol and choose the bob. You can do this for any breed.

If you want a skinnier or more muscular animal choose the dog (or cat) shaped symbol for options.
The scissors symbol allows you to groom the furs. If you want to give your Akita a poodle cut, this is where you go!
The cape is for clothing/collars. You can choose an everyday look and a look for when you are walking your pet.
Finally, there is paint mode. To be honest, until I played around with it, I was terrified! I have no talent for paint programs. These are the basics:
1. Use the color wheel or preset colors to load your brush.
2. There is a paintbrush, an eraser, and an eyedropper. The paintbrush can be set using the box at the bottom with different shapes. To be honest I don't know how to use the eyedropper. I will explain the eraser a little later.
3. The control for the paintbrush (immediately under the paintbrush symbol)) will allow you to set how big the paint swatch is. It will show a preview in the box. You can also rotate the paint, which is also shown in the box and will make sense a little further on in my explanation.
4. Next to the paintbrush options, you will see a bucket called "Fill Color" this is great if you decide you need a hot pink Akita! Select the bucket, choose a color and voila!
5. There is also a Butterfly labeled "Mirror Painting". When it is the full Butterfly whatever you paint on the right side of your dog will appear equally on the left in the exact same spot. So if you want your Pink Poodle Akita to have purple puff balls on their forelegs, this would be how to do it. You can now paint the front puffs at the same time. However, if you chose the broken butterfly, you can paint the front puffs two different colors. Now I will explain the eraser, Say you get purple paint on the feet and you don't want it there. Change your paint color back to the hot pink and choose eraser, then dab at the misplaced color.
6. The final set of options are where the fun begins. Highlight the paintbrush and you will see options for the shape the brush will produce. Again, using the butterfly will determine if you paint one side or both sides of your dog.
7. Chose the stamp and you can place a symbol on your pet. Want a cute little flower or heart on their hindquarters? This will allow you to do that. You can use the Butterfly to determine whether the symbol appears on one or both haunches. Or you can put flowers all over your doggo. I mentioned the rotate feature for the paint brush, this is a great place to play with that. You can use it to make your shape face or tilt a certain direction.
8. The stencil option allows you to apply patterns. Between us novices, I think it's less confusing to use Coat Color and Pattern to do that.
I hope this helps a little. Don't be afraid to just jump in and mess around. I have Zero talent but, have managed to make myself Petey from Little Rascals.

Not sure if you look for this sort of thing, but wcif an up-to-date mod that allows you to layer stuff like skin details, make-up, face paint, etc.?
I don't think there is a Mod that does that. You can ask in the Mod request thread or in the General Mods DIscussion area. My understanding is that as long as they are different categories you can attempt to layer skin details, make-up, and face paint. I know Aviera makes some eyes that are in the facepaint category and I can use them with any makeup.
Edit: I just want to add that I have seen creators put skin details under eyeglasses and necklaces to make them easier to layer.
